What you should really be putting in your Pimm’s

Pimm’s is one of our favourite summer beverages – but it is so hard to know what to add to make the most of it.

A gin-based liquor infused with liqueur, fruit juices and spices, Pimm’s requires fresh fruit, fragrant mint and cooling cucumber to create a refreshing alcoholic punch, perfect for warm summer evenings.

Here’s our recipe for how to serve it – so you just need to decide whether to have it on the balcony, by the tennis court or even on the boat.

Ingredients

  • 700 ml bottle pimm’s no.1
  • 1/2 cup (125ml) gin
  • 1/2 cup (125ml) lemon juice
  • 2 tbsp sugar
  • 2 cups (500ml) lemonade, chilled
  • lebanese cucumber, halved, seeded
  • medium green apple, chopped finely
  • medium orange, peeled, sliced
  • 10 mint leaves
  • 5 cups ice, to serve

Method

  1. Pour the Pimms, gin, juice, sugar and lemonade into a large jug; stir to combine.
  2. Using a vegetable peeler, slice the cucumber into long ribbons. Add cucumber to the jug with the fruit and mint.
  3. Fill glasses with ice. Pour over punch and enjoy!

 
Tip: Once made, this isn’t suitable to freeze.
