Pimm’s is one of our favourite summer beverages – but it is so hard to know what to add to make the most of it.
A gin-based liquor infused with liqueur, fruit juices and spices, Pimm’s requires fresh fruit, fragrant mint and cooling cucumber to create a refreshing alcoholic punch, perfect for warm summer evenings.
Here’s our recipe for how to serve it – so you just need to decide whether to have it on the balcony, by the tennis court or even on the boat.
Ingredients
- 700 ml bottle pimm’s no.1
- 1/2 cup (125ml) gin
- 1/2 cup (125ml) lemon juice
- 2 tbsp sugar
- 2 cups (500ml) lemonade, chilled
- 1 lebanese cucumber, halved, seeded
- 1 medium green apple, chopped finely
- 1 medium orange, peeled, sliced
- 10 mint leaves
- 5 cups ice, to serve
Method
- Pour the Pimms, gin, juice, sugar and lemonade into a large jug; stir to combine.
- Using a vegetable peeler, slice the cucumber into long ribbons. Add cucumber to the jug with the fruit and mint.
- Fill glasses with ice. Pour over punch and enjoy!
Tip: Once made, this isn’t suitable to freeze.
