Recipe: Vanilla Ice Creami Cake
Ingredients:
1 tablespoon cream cheese
1/3 cup granulated sugar
2 teaspoons vanilla bean paste
3/4 cup heavy cream
1 cup whole milk
Method:
- Microwave the cream cheese for 10 seconds.
- Add the sugar and vanilla extract to the cream cheese and whisk for about a minute
- Slowly mix in the heavy cream and until fully combined and sugar is dissolved
- Pour mixture into a cake tin shape of your choice and freeze for 24 hours with lid off
- To create a multi-layer cake with multiple flavour layers, freeze each layer for a full 24 hours before pouring on the next layer
The above creates one layer of ice cream cake, double or triple the recipe for a thick cake. Or make two additional separate batches and mix up the flavours – you could easily sub 2 Tbsp of chocolate chips/nuts or berries in place of vanilla bean paste.
