Hercules Noble's Cloudy Bay clams with nduja

Recipe

Bringing you a taste of Marlborough with Cloudy Bay clams, this impressive mouth-watering entrée is ready in less than 20 minutes, and is best cooked in a heavy-bottomed pan. 

Recommended wine pairing: Cloudy Bay Sauvignon Blanc. 

Ingredients

  • 6-8 Cloudy Bay clams per guest
  • 25g butter
  • 2 tablespoons olive oil
  • 1 small leek
  • 2 shallots
  • 1/2 fennel bulb 
  • 3 celery sticks
  • 1/3 cup nduja
  • 1 cup Cloudy Bay Sauvignon Blanc 
  • 1 cup double cream
  • 2 lemons
  • 1 bunch of parsley
  • 1 chilli for garnish

Method

Wash and drain the Cloudy Bay clams, and set aside. 

Add finely chopped shallot, celery, fennel, leek, olive oil and butter to a pan over medium heat. Gently fry for 5-10 minutes until caramelised. 

Once the veggies in the pan are soft, turn the heat up to high. Add the nduja and Cloudy Bay Sauvignon Blanc. Allow the wine to cook off for a minute or so.

Add your Cloudy Bay clams and cream, keeping the heat on high. Cook until all the clams have opened up and the sauce has reduced. This will take about 5-7 minutes. 

Finely chop the parsley, reserving some for garnish, and sprinkle through the clams with a squeeze of lemon.

Plate up using a big serving spoon. Garnish with parsley and chopped chilli.

Mop up the sauce with fresh sourdough, and enjoy with a glass of Cloudy Bay Sauvignon Blanc!
