Elderflower cranberry infused vodka ice-pops

Give your hot summer nights a grown up and boozy twist with these fun elderflower cranberry infused vodka ice-pops.

Ingredients

1/3 cup (80 millilitres) vodka
1/2 cup (125 millilitres) elderflower cordial
2 tbsp strained lime juice
1 cup (250 millilitres) sparkling mineral water
2 tbsp fresh mint leaves, thinly sliced
3 cups (750 millilitres) cranberry juice

How to make

1. In a medium jug, combine vodka, cordial, lime juice and mineral water. Divide mixture between the moulds; sprinkle equally with mint. Wrap the mould completely in plastic wrap; insert the ice-block sticks into holes, piercing the plastic (the plastic wrap will help keep the sticks upright). Freeze 6 hours or until mixture is frozen.
2. Pour cranberry juice over the vodka mint layer. Freeze 2 hours or until juice is frozen.
3. Just before serving, rub the outside of the moulds with a hot kitchen cloth; gently remove ice-pops.

Tips
You will need 24 x ¼-cup (60ml) ice-block moulds and 24 ice-block sticks.
