A masterclass in winter hosting with Cloudy Bay

When it comes to crafting unforgettable experiences, few do it like Cloudy Bay. Case in point: Wonderscape, the brand’s recent immersive event that saw guests dining on a floating platform surrounded by Otago’s mountain range. With a menu curated to highlight the brand’s world-class wines, and a tablescape that redefined innovative elegance, it’s no surprise the occasion sparked major hosting envy. Now, we’re taking cues from that iconic moment to reimagine entertaining at home.

How to style it

The secret to winter entertaining? Create warmth and intimacy through layers of tone and texture. Start with a deep-hued tablecloth — rich burgundy or forest green always feels luxe and elevated — then build with tactile elements such as linen napkins, vintage glassware, and polished cutlery.

Candlelight is essential. Cluster taper candles of varying heights down the centre of the table for dramatic flair. Then, to modernise the tablescape, mix in playful ceramics like those from In The Roundhouse. And, don’t forget the florals. Choose seasonal foliage in moody tones that play with your colour palette rather than compete with it. Think textural blooms, or even dried botanicals.

What to pour and pair with

We asked Kat Mason, Cloudy Bay’s wine communications manager, for her top picks for winter hosting. Mason recommends starting with Cloudy Bay Pelorus NV. “It’s the perfect pre-dinner pour to set the tone,” she says. “Especially when paired with fresh oysters, smoked salmon, or our personal favourite: thick-cut potato chips and Kiwi onion dip.” 

Next is the Cloudy Bay Pinot Noir 2023 — call it your dinner party MVP. “Its balanced profile of cherry, spice, and subtle oak makes it incredibly food-friendly. Pair it with a slow-roasted lamb shoulder and winter root vegetables, or keep things casual with a firepit smash burger.” 

For white meat, the Cloudy Bay Chardonnay 2023 is a winter favourite. “This Chardonnay is beautifully layered with citrus brightness, stone fruit, and soft nutty notes,” she says. Mason says to serve it with buttery spaghetti vongole, roast chicken and tarragon, or a leek and Gruyère tart for a meal that feels cosy yet refined.
